Santa Fe, NM
The year is 1978. Santa Fe has become one of my favorite destinations because of its scenery, history, culture, weather, and food. I am able to visit several times per year if I wish, so I can make a statement such as “Adobe Restaurant has the best enchiladas in Santa Fe,” and that is exactly what my notes say. In all honesty I have no recollection of ever being in this restaurant, unlike the Pink Adobe or La Tertulia which gave you the ambiance of Santa Fe along with the food. Still, best enchiladas are best enchiladas.
One reason for putting this on my list of classic restaurants is to encourage customers to seek out the best New Mexican food and to encourage restaurants that there are patrons like me that are looking for their type of food.
I have not found any successors to this restaurant (family or employees moving to other restaurants which serve the same type of food). I do think there is a successor of La Tertulia in Tulsa, Oklahoma. Still, there are plenty of chefs in The City Different that can prepare enchiladas that are worth seeking out. Good recipes probably live on in some form if they are popular enough.
